Best egg salad


  • 3 tablespoons low fat mayonnaise
  • 3 tablespoons low fat sour cream
  • ¾ teaspoon curry powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 large hard boiled eggs, coarsely chopped
  • 5 large hard cooked egg whites, coarsely chopped (reserve the yolks for another use)
  • ¼ cup finely chopped celery
  • ¼ cup finely chopped green onions, with tops
  • 3 tablespoons minced dill pickles


1.  In a medium-sized bowl, whisk the mayonnaise, sour cream, curry powder, salt, and pepper.

2.  Fold in the remaining ingredients.

3.  Serve on curly lettuce leaves.  Can be used as ingredients for a great Egg Salad Sandwich.
