Salmon with Lemon Butter Cream over Garlic Spinach
Elegant and comforting, this pan-seared salmon is smothered in rich lemon butter sauce and served atop garlicky spinach creating restaurant vibes at home.
Ingredients:
Salmon:
- 2 salmon fillets (skin-on or skinless)
- Salt and pepper
- 1 Tbsp olive oil
- 1 Tbsp butter
Butter sauce:
- 3 Tbsp butter
- 2 garlic cloves (minced)
- 1/2 cup heavy cream
- 1 Tbsp lemon zest
- 2 Tbsp lemon juice
- Salt and pepper to taste
Spinach bed:
- 3 cups fresh spinach
- 1 Tbsp olive oil or butter
- 1 garlic clove (minced)
- Pinch of salt
Instructions:
- Pat fillets dry, season with salt and pepper
- Heat olive oil and butter in a pan over medium-high heat
- Sear salmon 3–4 min per side until golden and just cooked through
- Remove and set aside
- In the same pan, saute garlic in a bit of oil or butter
- Add the spinach, then cook until wilted
- Season lightly and plate as a base
- Melt butter in a small saucepan, add garlic and cook 1 minute
- Stir in cream, lemon juice, zest, salt, and pepper
- Simmer 2-3 min until slightly thickened
- Place salmon over the spinach, then drizzle generously with the lemon butter sauce
- Pair with rice, mashed potatoes, or a crisp white wine
