Rainbow Mac and Cheese

Of course, rainbow foods have been all the rage for a while now, but it's safe to say rainbow mac and cheese might be taking things a little too far.

That being said, it seems pretty simple to make. In a recent video for Nerdist's "Put This in Your Mouth," Dan Casey, Rachel Heine, and Jenn Fujikawa demonstrate how to make this multicolored treat, and the recipe is actually really simple. All you have to do is make different batches of mac and cheese with food coloring added to each, mix up some colored bread crumbs to top the whole thing off, then arrange the colors in order and bake. Easy!

Anytime you mix carbs and bechamel sauce, magic is going to happen, but when you add rainbows into the mix, it really takes things to the next level, for better or worse. If you want to try a different recipe, this one from Brit + Co is a Pinterest favorite — but when it comes to mac and cheese, it's hard to go wrong.

  • 3 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 teaspoon salt
  • Pinch nutmeg
  • Pinch black pepper
  • Pinch cayenne pepper
  • 2 1/4 cups grated white cheddar + extra for topping
  • 3/4 cup grated parmesan cheese
  • 1/2 cup goat cheese
  • 1/2 pounds macaroni, cooked 2-3 minutes less than recommended cooking time
  • Pink, orange, yellow, green, blue and purple food coloring


  1. Set a saucepan to medium heat and add the butter.
  2. When it begins to bubble, add the flour and whisk for 1 minute. Slowly add the milk, whisking constantly until the flour is dissolved and the mixture thickens.
  3. Remove the pan from the heat. Add the salt, nutmeg, black pepper, and cayenne pepper and stir to combine.
  4. Add the white cheddar, parmesan cheese, and goat cheese and stir until the cheese has fully melted.
  5. Divide the cheese sauce evenly into 6 bowls, with 1/2 cup of sauce per bowl. Dye each bowl a color of the rainbow.
  6. Divide the macaroni into 6 bowls and mix one cup of cheese sauce into each bowl.
  7. Pour the macaroni into a buttered 9-inch square baking dish in stripes in the order of the rainbow.
  8. Sprinkle some extra white cheddar on top and bake at 375F for 15-20 minutes, until the cheese is bubbling.
  9. Let cool in the pan for 5 minutes and enjoy!
