HOMEMADE BLUEBERRY BISCUITS


Ingredients:

We need for Biscuits:

2 cups All-Purpose Flour

1 tablespoon baking powder

1+ 1/2 teaspoon salt

3 tablespoon sugar

1 stick unsalted butter, chilled

3/4-ish cup buttermilk (we would need a little bit more )

1 cup frozen blueberries

1/2 stick salted butter, melted

We need for make the Sauce:

1 cup castor sugar

3 tablespoon milk

1/2 teaspoon of vanilla


Instructions:

Cut butter into small pats and lay out on a cookie sheet lined with wax paper. Keep it the freezer for at least 10 minutes.

Use a little amount of bacon grease if available to prepare cast iron skillet if available, if it’s available. Easy tip: fry one piece of bacon, cop the pan and there you’re ready to go!

Preheat oven at 500 degrees.

Mix the sauce ingredients together (powdered sugar, milk, vanilla), and make sure the powdered sugar is melted totally

After mixing all the dry ingredients (flour, baking powder, salt, sugar) together, slice in the cold unsalted butter. Cut in until the butter is about pea-sized, relatively well mixed in. Add buttermilk. Add gradually and slowly until you have right enough where the dough separates from the sides of the bowl. Mix until well combined and roll it out onto a well-floured surface.

Prepare a large area for kneading to start kneading. (I use a large cutting board as it’s easy for clean-up!)

 Sprinkle t some flour on the kneading surface. Put the dough on the floured area and sprinkle some flour over the dough. Press the dough out (your hands will do so no need to roll with a pin) and flatten to about 1/2″ thickness. Spread blueberries on dough. Knead a couple of times and flatten back out to about 1″ thickness. (Actually, the thicker the better as the dough rises so beautifully!)

The blueberries may start to run onto the dough and you’ll start to see flecks of blue while the berries are defrosting.

Put biscuits in a cast-iron skillet and make sure biscuits are attached.

Bake at 500 degrees for about 10-12 minutes. Sometime around 6 to 8 minutes, take the skillet out of the oven and Damp the biscuits with melted salted butter with a brush. This is an important step in the baking process so be careful to do it. If the biscuits sides are showing, brush them too! When the tops start lightly browning and the berries burst, take them out. The heat in the middle of the biscuits will remain and will continue the cooking process eventually after removing out of the oven.
